I'm posting this recipe because they are AMAZING. Luckily I have a lot of people to share them with or I would eat them all. The recipe said this made 4 dozen, but I got more than 5 dozen using a Tablespoon cookie scoop. I think you could leave the bourbon out if you wanted, and maybe just replace with a bit more butter.
12 slices applewood smoked bacon, diced very small
2 1/2 c. all purpose flour
1 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
1/2 c. unsalted butter at room temp.
1/2 c. reserved bacon fat, chilled
3/4 c. granulated white sugar
3/4 c. packed brown sugar
3 Tbsp. bourbon
1 tsp. vanilla extract
2 large eggs
1 bag chocolate chips (I used Ghirardelli Bittersweet.
Cook the bacon til crisp and reserve 1/2 c. of fat, put it in the fridge to solidify. I bake my bacon and crumbled it later, but you can pan fry it already diced.
Preheat oven to 375. In a medium bowl, whisk together flour, baking soda, salt, and baking powder. In a separate bowl, cream together the butter, bacon fat, sugars, bourbon, and vanilla. Mix in the eggs one at a time. Stir in the chips and crumbled bacon. Use a Tablespoon cookie scoop, place dough on parchment covered baking sheets, and bake for 9-11 minutes, until they are lightly browned. Place on a cooling rack after 5 minutes. Try not to eat the whole batch at once.
