This morning we all calmed down over a yummy bowl of Spicy Carrot and Peanut Soup presented by bigdamnheroes. Tonight, I invite you all to calm down with a bowl of my own spicy soup that I made today. Not for the faint of heart I bring you Menudo!

What to use:

This is all approximations because I don’t use a recipe.

1. approx. 4 lbs. of fresh honeycomb tripe chopped into small pieces.

freeze first for ease of chopping.

2. approx. 2 1/2 lbs. of fresh white hominy.

yellow is good too but I prefer white.

3. 1 large onion diced.

4. 1 head of chopped garlic.

5. 2 packages of Knorr leak soup.

6. Lots of Salt to taste.

7. 2 lemons sliced into wedges and seeded.

8. 4 large pig feet.

9. Lots of extra hot New Mexico red chile powder. A whole lot.

10. Vegetable oil.

11. Menudo mix.

12. Diced onions or chives.

13. Corn tortillas.

Fill a 4 or 5 gallon pot with water and bring to boil. Dump ingredients 1 through 7 into boiling water squeezing the juice of the lemon into the pot before adding the wedges. Boil the shit out of for approx. 3 or so hours. Remove the lemon wedges, throw the pigs feet in the pot and continue boiling for 2 or 3 more hours.

Heat up some vegetable oil in a pan, take off stove and mix with a whole lot of the red chile powder. When thoroughly mixed, stir into pot of boiling ingredients. Continue to boil but at that point it’s done and looks like a volcano. .

Serve in bowl. Top with fresh diced onions or chives and menudo mix and eat with corn tortillas.

Sit back and enjoy breathing the chile induced fire while your nose runs and your head sweats.
