I hate zucchini (and all squash) in any form. I’ve been making a simple chicken and vegetable soft taco* lately that calls for zucchini to be sauteed along with the other veggies and things. I have been substituting asparagus, but that tends to bring its own set of issues and asparagus is rather stringy and expensive this time of year.

Any thoughts on a good non-squash, not asparagus zucchini substitute? I’ve been thinking of trying fried potatoes (too blah) or even uncooked apples (too sweet?).

*Chicken and Vegetable soft tacos

  • 1 tsp ground cumin, 1/4 tsp salt, 1/4 tsp black pepper. Mix
  • 12 oz chicken breast tenders (cube if huge)
  • one chopped red onion
  • 1 cup corn kernels
  • 1 cup chopped zucchini asparagus
  • 1/2 cup salsa verde (comes in a jar in the mexican food section of your local mega grocery)
  • 3 tbsp chopped fresh cilantro

Coat the chicken with the spice mix and sautee in a large pan until halfway done. Add veggies. Cook until chicken is done. Add salsa verde and cook until the liquid almost evaporates.

Serve family-style in a big bowl with your favorite tortillas and Monterrey Jack cheese on the side. Build your own tacos at the table or right there in the kitchen by the stove.
