I don’t know what I’m having for dinner tonight.

So here’s the deal: I was told my insulin levels might be getting a little wacky, and I should be increasing my protein intake and decreasing my carb intake. I’m a vegetarian, and I rely on carbs to provide the base for a lot of meals. Veggies over pasta or rice is basically my go to. I do make a good three bean chili (which I would normally eat with a hunk of crusty bread...), and I also like making bean and veggie tacos (which on corn tortillas shouldn’t be too bad...).

I’m having a tough time coming up with tasty-sounding vegetarian meals that will be filling that don’t have carbs. Ugh, am I going to have to force myself to eat more salads? Salads mostly make me sad.
