Because of various health issues, my mom and I are trying to eat healthier. Which is easier for my mom than for me, because I do not like vegetables. Fruit, I can live off of, but veggies and beans are not good. But I'm trying, and we're trying to cut out most carbs, sugars, and fats.

But, my mom's idea of the healthy cooking on this is some baked chicken (which is fine) and a *pile* of veggies on the plate. I'm thinking there has to be a way to incorporate the same amount of veggies into something that looks like real food, because choking down piles of steamed carrots and broccoli is killing me. (Yes, I know I obviously have the palate of a 3 year old. I'm working on getting better.)

Any ideas for good food options?
